Adraki Aloo Gobi

Ingredients


2 Cups florets of  cauliflower
2 medium potatoes chopped into small cubes
1½ inch ginger chopped
1 garlic clove chopped
1/2 teaspoon turmeric (haldi)
1/2 teaspoon cumin seeds
1 teaspoon coriander powder
pinch of asafetida (hing)
1/2 cup cilantro leaves chopped
1 tbsp oil
salt to taste
Preparation Method
  1. Take a pan, add oil and heat it at medium heat for 2 minutes.
  2. Now put cumin seeds and wait until they start sputtering.
  3. Add in the asafetida(hing),  turmeric and coriander powder and mix well.
  4. Add in the garlic,chopped ginger and Serrano pepper and let them cook for 5 minutes.
  5. Add in the potatoes cubes and mix well and cook for 5-7 minutes stirring occasionally.
  6. Add in the cauliflower florets and salt and mix well.
  7. Reduce the heat to low and cook covered for 15-20 minutes stirring every 4-5 minutes.
  8. Potatoes should be soft when done.
  9. Garnish with cilantro leaves and serve hot with rotis, Naan or Prathas
