Sitaphal Rabdi


Whole Milk = 2 litres
chopped red rose petals  (gulab) =  1 tsp
Almonds = 4
saffron = 1/4 tsp
Cardamom powder = 1/4 tsp
Sugar = 3/4 cup
Sitaphal (Custard Apple) pulp = 1 cup
Green pistachios unsalted = 4

 Methds of preparation

  1. Chop finely pista and almond.
  2. Boil milk in a heavy pot.
  3. boil slowly at low temperature for 10 minutes, after it starts boiling.
  4. Stir while boiling.
  5. Add sugar and stir till dissolved.
  6. Shut down flame, add saffron, cardamom, almonds, pista.
  7. Cool to room temperature.
  8. Then add sitaphal pulp, chill for 3-4 hours till very cold.
  9. Pour the mixture in individual serving bowls and decorate with rose petals.
  10. Serve chilled
